Carioca Recipe

Carioca or Karioka is another popular Pinoy dessert. This reminds me of my childhood days. I remember helping my aunt cook and sell this outside our grandmother's home in the province. I have to admit though, the only reason why I helped her was because she would give me some. 

This Carioca Recipe is the easy way and there are so many other variations that you can find online. Some recipes even call for shredded coconut but I decided to skip that one because I am all about easy cooking! ;)



Ingredients

  • 2 cups glutinous rice flour
  • 10 tablespoon water 
  • 1 cup coconut milk 
  • 1 cup brown sugar 
  • cooking oil 

Directions

  • In a bowl, slowly add water into glutinous rice flour and mix until it forms into a dough. Add more water if necessary
  • Form into 1 inch sized balls
  • Deep fry for 5-8 minutes
  • Remove from oil and drain excess oil on paper towel
  • Skewer 4-5 rice balls per bamboo stick
  • Set Aside

For the Coating

  • Mix coconut milk and brown sugar in a saucepan and heat over low fire
  • Stir continuously until it starts to thicken
  • Remove from heat and drizzle over rice balls
  • Serve warm or chilled
