Sweet Corn Ice Cream - Homemade Ice Cream Recipe

I just crossed something off my bucket list and that's to come up with a homemade ice cream recipe . Woot! Let's just say I am over the  moon because I have been wanting to make my own ice cream at home for a long time now, but since I do not have an ice cream maker, I always put it off. Well, scratch that, because I just made Sweet Corn Ice Cream, my very first homemade ice cream recipe for the blog!

Sweet Corn Ice Cream - Homemade Ice Cream Recipe

Thanks to my new stand mixer that came with a hand blender, I was able to make my sweet corn ice cream with no sweat!

I bought this 3D stand mixer a few days ago as an early birthday present and I am so glad I did! It was affordable and came with the hand blender that I needed for this homemade ice cream recipe. If you have a food processor, I guess you can use that to puree the corn but you will still need the mixer to whisk the eggs, unless you have really strong arms for manual whisking which I have done so many times in the past. LOL 

So, are you ready to make your own ice cream at home?

Sweet Corn Ice Cream - Homemade Ice Cream Recipe

Ingredients

  • 1 can Jolly Cream Corn
  • 2 boxes of all purpose cream
  • 1 can small evaporated milk
  • 1/2 cup sugar
  • 4 egg yolks
  • 1/2 tsp vanilla extract

Instructions
  • In a bowl, mix cream corn, cream and milk then blend using a hand blender until corn has been pureed
  • Strain mixture and discard the corn casings
  • Place corn, cream and milk mixture in a saucepan and cook over low heat, bring to a simmer and turn heat off so you can prepare the egg mixture
  • Using a mixer, whisk egg yolks and sugar until it becomes thick and light
  • Get 1/2 cup of your cream, milk and corn mixture and slowly add it to the egg mixture to warm it, continue to whisk
  • Slowly add another 1/2 cup of the cream, milk and corn mixture into the egg mixture and continue to whisk
  • Now slowly add the warmed egg mixture into the saucepan and cook over low heat for 5-6 minutes, continue whisking until mixture thickens
  • Once mixture has thickened, transfer to a container, let cool for 2 minutes then cover with cling wrap making sure that cling wrap will sit on top of the mixture, cover then freeze over night
  • Once frozen, you can now serve your sweet corn ice cream
Now if you have an ice cream maker, you can still process this one for a creamier texture but if not, no sweat! You can serve it as is just as I did and the kids will love it! Trust me, my kids had several servings!

This sweet corn homemade ice cream recipe will yield a texture-y ice cream because you know corn can be a bit coarse-y, right? But the taste is going to be corny, just the way I like it! ;)
